Egg Nog Pie

This recipe from the Magazine "Simple and Delicious"
Super Uber Delicious this one is.

You will need:
4oz Cream Cheese
1 T Butter Softened
1/2 Cup Confectioners sugar
1/4 Cup Egg Nog
2 T sour cream
1 t pumpkin pie spice (I used cinnamon, nutmeg and cloves in place of this. 1/2 t on each)
1 1/2 cups Whipped Cream (sweetened and whipped)
1 graham cracker crust
1/8 tsp nutmeg

In a small bowl, beat the cream cheese, butter, and confectioners sugar until smooth. Beat in the eggnog, sour cream and pie spice. Fold in the whipped topping; spread into crust. Sprinkle with nutmeg. Cover and freeze for 4 hours. (or until firm)
Remove from the freezer 15-25 minutes before slicing.

Turkey Alfredo Potatos

Things you will need:
(serves 6-8)

2 cups Half and Half
6-7 small to medium Potatoes
5 T Alfredo Sauce
1/4 cup Shredded Colby cheese
1- 2 Cups Shredded Turkey
1 t garlic powder
*(optional) 1/4 white onion chopped  

Clean your potatoes
Slice your Potatoes as show in picture. I use my Food processor to make this easy and slice them thin.
Place your potatoes in the casserole dish and cover with the half and half. Put in the oven and turn your oven to 350  Let the potatoes cook while your oven heats up for approximately 30 minutes.

Pull the dish out of the oven and add the remaining ingredients. Stir, cover with foil and place back in the oven for 45 minutes - 1 hr. Uncover Stir and continue to bake for 15-20 minutes.

Enjoy!

This is a great recipe for that Left over Holiday turkey.

Lumpia (Type of Egg Roll)

Things you will need:


1/2 white onion Chopped
2 large carrots chopped or 1/2 cup baby carrots chopped
1 can water chestnuts
2 T Accent
2 T Soy Sauce
1 lb Ground pork (I prefer to use Turkey instead of pork here)
1 lb shrimp
2 eggs
1-2 pkgs Egg roll wrappers (can be found at most Asian markets I prefer KIM LONG on 3500 south and redwood rd)


  • Mix all ingredients in a food processor until well blended. 
  • Open your thawed wrappers but keep a moist towel over the top of them to keep them from drying. 
  • Using one Wrapper at a time fill with the amt desired for the thickness desired on your Lumpia.
    Roll the long way and make sure it is a tight roll, Leave a 1/8 inch forgiveness at the ends so as you roll you don't have your filling squeeze out the ends. 
  • Wet the very last part of the roll with water to seal the roll. 
*Optional - Cut in half or 3rds. * Optional - You can fold in an envelop pattern to close the ends if desired, However this does change the taste and I prefer the ends open when I cook mine.
  • Deep fry in Peanut oil for approximately 4-7 minutes until slightly brown  (I prefer a deep fryer for this, they cook evenly this way, however you can do this in a frying pan.) 
  • Place on paper towels to soak up excess oil. 
  • Serve with Sweet chili sauce. (also found at Kim Long Asian Supermarket)

I will post pictures later this week to show you how to do this if there is any confusion.

Pumpkin Bread

Ingredients

  • 1 (29.5 ounce) can pumpkin puree
  • 7 eggs
  • 2 cups vegetable oil
  • 1 1/3 cup water
  • 6 cups white sugar
  • 6 1/2 cups all-purpose flour
  • 4 teaspoons baking soda
  • 3 teaspoons salt
  • 2 teaspoon ground cinnamon
  • 2 teaspoon ground nutmeg
  • 1 teaspoon ground cloves
  • OPTIONAL  - Add chocolate chips for a chocolate chip pumpkin bread  about 1 pkg.   *** Add as a last step.

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour six medium loaf pans.
  2. In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans.
  3. Bake for about 50 minutes in the preheated oven. Loaves are done when toothpick inserted in center comes out clean.

Butterscotch or White Chocolate Popcorn

Simple and easy Delicious snack.

2 gallon size zip lock bag full of popped buttered popcorn (I buy this in LARGE quantity from Western Concessions pre-popped)
1 bag chocolate chips  either butterscotch or white chocolate depending on what you are making


In your food processor chop up the chips until they are a rough powder.
Shake a little chocolate into your zip lock bag a little at a time. You will use half in one bag and the other half in the other. Shake your bag every few seconds while adding to make sure it gets down in the bag. Close your bag and shake up to be sure each popcorn kernel gets chocolate in each part of the kernel.

Microwave for 40-50 seconds, 10 seconds at a time, shaking the bag in between each 10 seconds.
Poor the popcorn into a strainer and let cool/dry.   Then separate into serving sizes or whatever you prefer at this point.  ENJOY!

Beef Stew

*SPICY and Delicious

3 pounds stew meat
2 T steak seasoning
1 1/2 cans diced tomatoes w/juice
1 1/2 cups water
1/4 cup instant tapioca (dry mix)
1 1/2 T beef granules
1 T sugar
2 t salt
1 t pepper
6 carrots cut into 1/2 - 1 inch pieces
3 celery stalks cut into 1/2 - 1 inch pieces
5 potatoes peeled and cubed (bite size)
1 1/2 white or yellow onions, coarsely chopped
1 cup bread crumbs

Sprinkle the beef with the granules or steak seasoning. Oil the pan with olive oil, just enough to coat the pan to prevent sticking. Brown the meat on all sides and then combine with the rest of the ingredients.

Crock Pot -  let cook on low all day.
Oven (baked) - bake in the oven at 350 degrees for 2 hours.
Stew Pot -   place in a stew pot and refrigerate for 1 hour or until ready to cook. Cook the Stew on the stove top for 1 1/2 - 2 hours. (bring to a boil stirring every 5 minutes for 20 minutes, then turn the heat down to a simmer. Stirring Every 15 minutes to prevent burning.)

Squash Salad

You will need:

1 Yellow squash
1/2 small zucchini squash
1/4 cup Swiss chard
1 oz feta cheese
2 egg whites
2 tablespoons Sliced Almonds


Rinse and Slice the Yellow squash. Then spray a hot frying pan with non stick olive oil. Place the squash on the frying pan on medium heat. Cook about 3 minutes turning as needed. Place the Cooked squash on a place. Cook the zucchini squash the same way and place on top of the Yellow squash.  Cook the egg whites with the Swiss chard, feta cheese and almonds, Scrambling as you cook.  Top the Squash with the Eggs.

Enjoy!    Serves 1

Crepes With Turkey and Avacado

You will need:

2 1/4 cups milk
2 eggs
2 tablespoons melted butter
2 1/4 cups flour
1/4 cup sugar
1/2 teaspoon salt

Melt the butter and then add the milk and eggs. In a separate, smaller bowl, combine the dry ingredients.

Whisk together the milk and eggs with the dry ingredients.

Cover and refrigerate at least an hour, or overnight.
Re-whisk the batter before you cook the crepes.

To cook:
Butter a hot fry pan (small or medium), then wipe out the excess butter with a paper towel.
Pour in a small amount of crepe batter and tilt the pan as needed so the batter spreads and covers the bottom of the pan. As the edges begin to peel up flip the crepe, cook for a few seconds on the other side.


The Stuffing:

Fill with your favorite meats cheeses and more.

Suggested:   Turkey and Avocado

1 pkg sliced deli turkey
1 pkg sliced provolone Cheese
small amount of Avocado Equivalent to 1 avocado
1/2 Diced Onion
1 diced Green pepper
1 large diced tomato


Build your crepe as desired.  Should make about 12 + depending on the thickness.

Beef and Broccoli

Steam broccoli -
3 cups fresh cut broccoli
1 tsp pepper
1 tsp salt

Marinade-
2 tablespoons olive oil
2 tablespoons Soy sauce
1 teaspoon white sugar
3 tablespoons water

Sauce-
1-2 tablespoons flour
1 diced white mushroom
1 teaspoon rice vinegar
1/3 cup water
1/3 cup  soy sauce
1/2 chopped/sliced white onion

Beef-
1 lb steak/beef

Mix together your Marinade: sugar, soy sauce, water, olive oil. Cut your beef into desired slices and tenderize the beef. Set the beef into the Marinade and let the beef sit for 30 minutes.

Meanwhile start a pot of water and bring to a boil (about 4 cups). Steam or Boil your broccoli until almost cooked.

Create your sauce- In small sauce pan combine the following:  soy sauce, water, add flour while warming to desired thickness ( will thicken more while it warms.)  Stir until well blended. Add onion and mushroom. Cook on low until onions are soft.

Heat up your wok or frying pan. Spray lightly with olive oil. Take your Beef from the marinade and fry in wok or frying pan, when the beef is almost done add the broccoli. Cover with sauce until everything is well coated and Cook for an additional 5 minutes stirring frequently.

Serve warm over white rice.

Walnut Fudge

1/2 cup crushed walnuts
1 bag semi-sweet chocolate chips
1/2 can Sweeten condensed milk
1/4 cup butter

Line a bread pan with Foil and grease with Crisco.
Melt the butter on low heat in a sauce pan. Add the chocolate chips. After both are well mixed add the milk. Stir until well blended and smooth. 
Remove from heat and add the walnut. Mix quickly and poor into prepared pan.  Set aside and let chill until firm and no longer warm.  Cut into squares and serve.

Easy Smokey Rolls

Pin It For this you will need:

2 Cups All Purpose Flour
1 pkg Yeast
1 Cup Warm Water
1 Tablespoon Sugar
2 Tablespoons Olive Oil
1 Teaspoon Garlic Salt
Non Stick Spray

Start by Measuring out the 1 cup warm water in a large mixing bowl. Sprinkle the Sugar into the warm water then add the Yeast. Stir a little to let water cover all of the yeast. Let this rest for about 10 minutes until foamy.  Now add the Oil and Then flour. Mix with a fork scrapping the sides of the bowl.  Knead the dough about 12-15 times. Cover with a warm damp towel.  Let rise for about 30 minutes, until double in size.

On a lightly floured surface punch out the dough and knead again about 5-10 times.
Cut your dough in half and cover the other half.  With the first half in hand separate into 6 round balls equal in size. roll each of these out to a small pizza shape.
Cut your pizza shapes in 8.
Starting at the fat end of your pizza shape take your Smokey and roll it up in the dough as you would roll a croissant.

With the over preheated to 350 f   spray your cookie or pizza sheet with a non stick spray and lightly sprinkling the garlic salt on the pan.  Place your rolled smokies on the pan and bake for about 10 minutes or until just barley browned.

Low fat High Protein : Use the Turkey Smokies, they are very delicious and contain little fat and low on calories.

For this you will need:

Dough
2 Cups All Purpose Flour
1 pkg Yeast
1 Cup Warm Water
1 Tablespoon Sugar
2 Tablespoons Olive Oil

Cinnamon
            1 stick butter (1/2 cup) Divided
            2 tablespoons Cinnamon
            1 teaspoon nutmeg
            ¼ teaspoon cloves
            ½ cup sugar

Non Stick Spray

Start by Measuring out the 1 cup warm water in a large mixing bowl. Sprinkle the Sugar into the warm water then add the Yeast. Stir a little to let water cover all of the yeast. Let this rest for about 10 minutes until foamy.  Now add the Oil and Then flour. Mix with a fork scrapping the sides of the bowl.  Knead the dough about 12-15 times. Cover with a warm damp towel.  Let rise for about 30 minutes, until double in size.

Cut your dough in half.  Cove one half and with the other roll out your dough into a rectangle shape.

Mix together in a small bowl the Cinnamon, Nutmeg, Cloves and Sugar.
Melt ½ the stick of butter. With the other half keep at room temp and knead until pliable.
Rub the pliable butter across the rolled out dough to well coat the top of the dough.
Cut the dough into 8 pieces or more depending on the thickness desired.
Sprinkle some of your sugar mixture onto the dough to lightly coat the dough.
Fold over each piece so that no sugar is showing. 
Take each end of your folded piece and twist the dough. 
Once twisted roll in the melted butter and then roll in the sugar mixture to coat the twist.

Spray your pan (for a softer twist use a glass pan, otherwise a cookie sheet will do fine.)
